This week, the Food Truck Kitchen heads east on Eat St. to New York City for something you won’t find on every street corner or food pod – Schnitzel. Launched in 2009, Schnitzel & Things was the
first mobile food truck serving schnitzel with a new and creative twist. Schnitzel is not very common in America, but the concept, brand and food caught on like wildfire.
Just in case you’re wondering, Schnitzel is a hand pounded, lightly breaded thin cutlet of meat fried to golden perfection. It is traditionally served with Austrian potato salad, cucumber salad and a lemon wedge.

Chicken Schnitzel
Ingredients
2 chicken cutlets, boneless and skinless (about 5 ounces each)
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg
2 tablespoons milk
1/4 cup dry Panko breadcrumbs
2 tablespoons canola oil
Directions
1. Flatten the chicken cutlets in between two pieces of saran wrap.
2. In three separate shallow bowls, place the flour in one bowl, combine the egg and milk in the second bowl, and the breadcrumbs go into the last bowl.
3. Coat the meat with the flour, then dip into milk/egg mixture and finally into the breadcrumbs.
4. In a large skillet on high heat, fry the chicken schnitzel for approximately 1 minute per side.
Yield: 2 servings
